Here is an easy to make paleo pancakes recipe for you, you don’t have to be on a full paleo diet to make and eat these pancakes either.
If you are interested or don’t know what the paleo diet is all about you can do a search on your computer as there is plenty of information about what paleo eating is.
The good thing about these paleo pancakes, like most of the protein pancake recipes I have here, they are easy to prepare and make and also contain protein.
Here are the ingredients you will need for the paleo protein pancakes.
½ x Banana
2 x Tablespoons coconut flour
1 x Scoop of a vanilla protein powder or a natural unflavoured protein powder of choice
1 x Full uncooked egg 3 x Egg whites, uncooked and separated
1 x Teaspoon of baking powder 1 x Dash of cinnamon if you need it
1 x Tablespoon of coconut cooking oil to go into the frying pan
Cooking and Serving the Paleo Pancakes
The paleo protein pancakes like I have mentioned above are easy to prepare and cook as well.
You start by putting all of the ingredients above into a blender and put it onto high or pulse it until completely mixed and has a consistent batter.
I have also mixed this recipe with a fork sometimes too, you put all the ingredients in a mixing bowl and then stir, squash and mix until you get the batter almost the same as above.
When mixing with a fork the banana tends to stay a bit chunkier throughout the batter, which isn’t a bad thing.
The amount of ingredients above makes approximately two medium size paleo protein pancakes.
Put your frying pan onto the stove element next and bring to heat, I usually use about three quarter of the maximum for paleo pancakes.
Pour or scoop into the pan your choice of cooking oil, I have used coconut oil here for these pancakes.
Pick up the pan form the handle and roll around until the coconut oil has melted and also covered the surface of the inside of the frying pan.
Then pour or scoop the paleo protein pancakes mix into the frying pan.
The amount of protein batter you pour in here will give you the pancake size you want.
So make the choice here if you want lots of small pancakes or a few medium size ones.
Remember bigger isn’t always better sometimes when it comes to pancakes, if you have a small frying pan they can sometimes be too thick and not cook through properly before you flip them, also you run the risk of burning the pancakes too while trying to cook them through.
So it is best to aim for medium size pancakes here for the best outcome during cooking.
Brown the paleo protein pancakes on one side, watch the top of the batter to see when the best time to flip them is.
You should see the batter start to bubble through and also see it changing colour as the pancakes cooks through.
Flip and then monitor the other side cooking by looking underneath the pancake. When brown and cooked through, take them out, serve onto your plate and then eat.
You can use different ingredients instead of the banana, berries come to mind and also apples.
