This is my easy to make and easy to eat protein pancakes mix, I made this recipe up while I was experimenting on the weekends and it is seriously easy to make and easy to eat.
In reality the time it takes to clean up after making the protein pancakes is far longer than what it takes to prepare them and eating them.
So if you are looking for an easy breakfast alternative or even pre workout protein pancakes, this maybe the protein recipe for you.
Here are the ingredients, note that there is only four (Not including your cooking oil used to cook the protein pancakes)
1 x Egg
2 x Tablespoons almond butter or similar type butter
1/3 x Banana
1/2 x Scoop of protein powder, vanilla or organic natural protein powder
Cooking and Serving the Protein Pancakes ::
These protein pancakes are easy to cook too as you have to put all the above ingredients into your blender and mix until the banana is mixed in with the rest of the ingredients into a thick pancake batter.
Note to self here, do not put the whole egg into the mix shell and all.
Crack the egg in, add the butter, banana and the half scoop of protein and then mix like I’ve said above.
I have sometimes not used a blender and just used a bowl, so I put all of the ingredients into the bowl, grab a fork and mix them up making sure I squash the banana up a fair bit with the fork.
I doesn’t have quite the same consistency in the batter mix when doing it this way but it makes cleaning easy and also you get little pieces of banana through the pancake which is good too.
The amount of ingredients in this protein pancakes mix makes two small to medium sized pancakes.
If you double the recipe you can make four, triple the recipe and you get six, not rocket science but you get the drift of how it goes.
I must add here too, you can add in more or take out the volume of the single ingredients above, if you like banana, add a bit more in, I found if the pancake batter is still a bit runny I add more protein powder into the mix.
This not only thickens the protein pancakes up it adds to the protein count of the meal too, = win / win.
Next up is putting your frying pan on the stove and heating it up.
I put the gas on our stove onto about half to three quarter, put the frying pan on top, wait for it to get hot and then add your oil of choice to the pan and swill around to cover the bottom of it.
Then pour the protein pancake mixture into the pan into two even size pancakes, make sure here they aren’t too thick either so they are easy to cook through.
Brown the protein pancakes on one side, I usually put the flipper underneath and have a sneak peak to see if the pancake is brown underneath, I only do this once I see the batter bubbling from the top.
When brown on the underside I flip the pancake over and let it cook through after that.
When both side of you protein pancakes are brown, scoop out of the frying pan and put onto your plate and then it is onto the best part, eating the pancakes.
I also add fruit if I want around the sides of the pancakes if I think it won’t be enough for a meal or cut up the other part of the banana and have this on the side or top.
I sometimes use berries or a berry based antioxidant powder with this recipe instead of the banana, it turns the protein pancakes red but you get a full berry flavour throughout.
